- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 1/2 lb ground beef
- 1 cup dry bread crumbs
- 2/3 cup ketchup
- 1/2 cup fresh parsley, chopped
- 1/2 cup (2 oz) Parmesan cheese, grated (optional)
- 3 eggs, lightly beaten
- 1 tsp smoked paprika (optional)
- 1 tsp salt
- 1/2 tsp black pepper
Directions
- Preheat the oven to 350°F (175°C).
- Line a 9x5-inch loaf pan with parchment paper.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the onion and garlic and sauté until softened, about 6-8 minutes.
- Add garlic and sauté for another 1-2 minutes.
- In a large bowl, combine the ground beef, bread crumbs, ketchup, parsley, Parmesan cheese (if using), eggs, smoked paprika (if using), salt, and black pepper.
- Add the sautéed onion and garlic to the bowl and mix until well combined.
- Knead the mixture with your hands until it holds together.
- Transfer the mixture to the prepared loaf pan and shape it into a loaf.
- Place the loaf pan on a baking sheet to catch any drips.
- Bake in the preheated oven for 1 hour 15 minutes or until the internal temperature reaches 160°F (70°C).
- The top should be firm to the touch and has shrunken slightly from the sides of the pan.
- Pour off excess fat and let the meatloaf rest for 15 minutes before slicing.
- Brush the top with ketchup or barbecue sauce if desired.
