This classic meatloaf recipe is a family favorite. It’s easy to make and can be customized with your favorite spices and sauces. Serve it with mashed potatoes and green beans for a comforting meal.

Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 1/2 lb ground beef
  • 1 cup dry bread crumbs
  • 2/3 cup ketchup
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup (2 oz) Parmesan cheese, grated (optional)
  • 3 eggs, lightly beaten
  • 1 tsp smoked paprika (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9x5-inch loaf pan with parchment paper.
  3. In a large skillet, heat the vegetable oil over medium heat.
  4. Add the onion and garlic and sauté until softened, about 6-8 minutes.
  5. Add garlic and sauté for another 1-2 minutes.
  6. In a large bowl, combine the ground beef, bread crumbs, ketchup, parsley, Parmesan cheese (if using), eggs, smoked paprika (if using), salt, and black pepper.
  7. Add the sautéed onion and garlic to the bowl and mix until well combined.
  8. Knead the mixture with your hands until it holds together.
  9. Transfer the mixture to the prepared loaf pan and shape it into a loaf.
  10. Place the loaf pan on a baking sheet to catch any drips.
  11. Bake in the preheated oven for 1 hour 15 minutes or until the internal temperature reaches 160°F (70°C).
  12. The top should be firm to the touch and has shrunken slightly from the sides of the pan.
  13. Pour off excess fat and let the meatloaf rest for 15 minutes before slicing.
  14. Brush the top with ketchup or barbecue sauce if desired.
