Makes: 2 half pint jars

Ingredients
- 4 tbsps salted butter
- 2 tbsps olive oil
- 4 large yellow onions, halved and cut into 1/4 inch slices
- 2 tsps fresh thyme leaves
- 6 cloves garlic, minced
- 2 tbsps packed brown sugar
- 1/4 tsp of kosher salt
Directions
- In a large skillet, melt the butter and olive oil over medium heat.
- Add the onions, thyme, and garlic to the skillet and stir to coat the onions in the butter and oil.
- Cook the onions stirring frequenty, until golden and starting to caramelize, this is the 20 minute mark.
- Add the brown sugar and kosher salt to the skillet and stir to combine.
- Continue to cook the onions, stirring frequently, until they are deeply caramelized and have a rich, sweet flavor, about 8-10 minutes more.
- Remove the skillet from the heat and let the onions cool completely then divide them between two half pint jars.
- Keep refrigerated for up to 1 week.
